Nine Month Shelf Life Without Refrigeration

COOKING DIRECTIONS

Our serving size is 1 ounce (about a quarter of a cup or one small handful).  Put the pork rind pellets into an ordinary paper sandwich / lunch bag.  (Actually, bag manufacturers call it a  # 4 sized bag.).  These common bags are available at most large supermarkets at about $3.00 for 100 of them. Fold the bag shut.  Lay the bag on it's side in the microwave. Shake the bag. This is so the pellets won't stack up on top of each other. They puff up better this way.

Consider your first batch to be a test batch. This is because microwave ovens are manufactured at different strengths. We advise you to start with a time of a minute and a half. If some of the pellets don't puff up all the way, or if a few burn, adjust the time up or down by ten or fifteen seconds. (My 1000 watt micrwave works best at 99 seconds.) They don't make much noise as they puff up. When you pour them out of the bag, they will be snapping, crackling and popping. This will continue for a while.
If you pop up more than you can eat, keep them in a zip lock bag.

THEY WILL KEEP AT ROOM TEMPERATURE
FOR UP TO NINE MONTHS.

PLEASE NOTE:    

OILY  VS:  DRY PELLETS

 When manufactured, the pork rind pellets are covered with residual oil from the pig skin from which it is made. When packed into large cartons, the oil starts to slowly seep towards the bottom of the carton. Consequently, the pellets on top in the carton become dry and the pellets at the bottom become quite oily - literally dripping with oil. The pellets in the middle of the carton have various degrees of oil covering them. 

So, if you order more than one bag of pork rinds, be aware that some may be covered in oil and others may be totally dry.  This is perfectly normal and there is nothing wrong with the ones covered in oil. They all cook the same, taste the same and look the same after cooking.

We point this out to you in advance, so you won't think the oily ones have "gone bad". They are just fine. They all have a nine month shelf life without refrigeration.
